The mobile apps work fully offline. Work you log without signal is queued and merges automatically when you reconnect. A banner at the top of the app tells you which state you are in: red means no connection at all, amber means the connection is too weak to be useful (the app switches to the copy saved on your phone), and a neutral banner means you chose to work offline yourself.
